Recipe for Spaghetti with mussels or clams–4

This is the best recipe I know for this dish as the spaghetti cooks with the mussels or clams and really takes on their flavour.


Ingredients

• 1 kg mussels cleaned with their beards taken off
• 3 tablespoons olive oil
• 1 glass of white wine
• 1 clove garlic
• 1 dried chilli
• Fresh parsley or basil for serving



Method

• Cook spaghetti in salted water for 7 minutes
• Heat up olive oil and fry garlic for one minute with flaked chilli
• Drain spaghetti and put it back into pot with mussels
• Pour in wine
• Cover and cook for 3 minutes until mussels are open
• Pour in oil mixture and stir
• Serve with chopped parsley or basil
